Turkey Pot Pie

2 pieces pie crust
1/2 cup heavy cream
2 tablespoons flour (optional, but recommended)
3/4 cup chicken broth
1 cup frozen mixed vegetables
2-3 cups chopped turkey

Bring pie crusts to room temperature. In a large pan, add heavy cream and flour. Heat on medium-low to create a roux. Add chicken broth, and whisk to combine. Add mixed vegetables, then chopped turkey, and combine.

Line a pie dish with one crust, then add mixture into crust. Top with the second crust, then bake 30-40 minutes or until crust is golden brown.
