4-5 flour tortillas, cut to be about 6 inches in diameter (you can also use corn tortillas)
Vegetable oil, for toasting
1 cup shredded chicken, cooked
1/4 cup sour cream
1/4 cup chopped bell pepper
In a bowl, combine all ingredients except tortillas, and mix. Spoon mixture onto tortillas, then roll tightly. Add a splash of olive oil to a large pan, and add tortillas to pan. Toast them on medium-low heat for about 60 seconds per side, or until golden brown.
