Ingredients: Makes 6-8 lettuce wraps
1 pound ground chicken, plus oil for cooking
1/2 cup tzatziki
6-8 butter lettuce leaves
1/2 cup kalamata olives
1/2 cup feta
In a large pan, add a splash of oil, then chicken, and cook on medium-low until meat is fully browned—about 8-10 minutes. Season meat with salt and pepper. Then, add tzatziki to pan, and toss with chicken. Scoop chicken onto lettuce wraps, then top with olives and feta.
