Ingredients: Makes 6-8 lettuce wraps
1 pound ground chicken
Salt & pepper
1 garlic clove, chopped, plus oil for sautéing
1/2 cup store-bought spicy peanut sauce
6-8 butter lettuce leaves
Chopped scallions, for garnish
In a large pan, add a splash of olive oil and chopped garlic, and heat 1-2 minutes on medium-low. Add chicken to pan, and season with salt and pepper. Cook on medium-low, breaking up the chicken as it cooks, until meat is fully browned—about 8-10 minutes.
Once chicken is fully cooked, add peanut sauce and combine. Scoop chicken onto lettuce wraps, garnish with scallions, and serve.
