Light Fish & Chips

Ingredients: Makes 2 servings
2 pieces frozen cod, fully defrosted
1/4 cup Italian-style breadcrumbs
1 sweet potato, sliced into fries
1 teaspoon olive oil
1/2 teaspoon paprika
Sea salt, to taste

Directions:
Let fish sit 20-30 minutes at room temperature before cooking.
In a bowl, combine breadcrumbs and Parmesan. Coat fish in breadcrumb mixture, then cook in an air fryer 10 minutes at 350, or bake in the oven 10-12 minutes at 350 (fish should reach an internal temperature of 145 degrees.
For sweet potato fries, combine olive oil, paprika, and sea salt. Toss fries in mixture, and air fry 12 minutes at 400.

Five-Ingredient Tip: Cook sweet potato fries in 4-minute intervals, tossing the fries in between to make sure they cook evenly.
