Light Penne Alfredo

Ingredients: Makes 2 servings
2 servings penne
1/2 cup 2% milk
1/2 tablespoon flour
2 tablespoons Neufchatel or whipped cream cheese
1/4 cup fresh Parmesan, grated
Optional: 1/2 teaspoon fresh garlic, finely chopped

Cook pasta according to package instructions. If using garlic, in a medium pan, add garlic and milk; season with salt and pepper, and heat on medium-low for 2-3 minutes. Then, add flour and whisk. (If not using garlic, just add milk and flour, then heat 2-3 minutes on medium-low). Add Neufchatel or cream cheese, and whisk until fully melted, about 2 minutes. Then, add Parmesan, and whisk until fully melted. Toss pasta in the sauce and serve.
