Roasted Tomato & Feta Crostini

3 cups cherry tomatoes, sliced horizontally, plus olive oil for roasting
2 cloves garlic, finely chopped
Sea salt
1 baguette, sliced into 1-inch pieces
2 cups feta cheese
2-3 large basil leaves, chopped

Preheat the oven to 375. Spread tomatoes and garlic onto a large sheet pan, and drizzle olive oil over top. Season generously with sea salt, and roast for 25 minutes.

Drizzle olive oil over baguette slices. Remove tomatoes from oven, and toast baguette slices in oven for 5 minutes to crisp up. Remove baguette slices, then top with feta. Add baguette slices back to the oven for an additional 5 minutes to warm the feta. Remove once more, and top with tomatoes and basil, then serve.
