Ciabatta bread, plus softened butter or mayonnaise, for toasting
2 ounces Asiago
2 tablespoons fig jam
1/4 cup chopped or sliced sweet onion, plus olive oil
2-3 slices thick-cut bacon, cooked
In a small pan, heat a splash of oil on medium-low, then add onions and cook to soften, about 5 minutes. Remove from pan, and set aside. Spread softened butter or mayonnaise on bread. Top with Asiago, fig jam, onions, and bacon. Cook on medium-low heat 5-7 minutes, then flip and cook an additional 5 minutes or until cheese is melted and toast is to desired crispness.
