
Ingredients:
6 sweet mini peppers
5 tablespoons cream cheese
1/2 cup shredded sharp cheddar
1 teaspoon taco seasoning, plus a bit more for topping
2-3 tablespoons chopped sweet onion
Directions:
Cut mini peppers vertically and remove seeds and membranes. Set aside.
In a bowl, combine cream cheese, cheddar, taco seasoning, and onion, and mix well. Spread mixture into each pepper, and top with a bit more taco seasoning.
