Orecchiette Pasta Salad

4 servings orecchiette
2-3 tablespoons olive oil
1-2 tablespoons lemon juice
1/2 cup feta
2-3 fresh mint leaves, chopped or julienned
Sea salt and black pepper to taste

Pasta salad should be served warm, but not hot.
Cook pasta according to package instructions. Drain pasta, then add it to a large bowl. Toss with olive oil and let cool 5-10 minutes. Toss pasta with lemon juice, then add feta and mint. Season with salt and pepper, toss once more, and serve.
