Ingredients:
12-15 jumbo shrimp, peeled, deveined, and cooked (you can also find pre-cooked shrimp at the grocery store)
1 tablespoon mayonnaise, plus more as desired
1-2 teaspoons fresh dill, chopped
1/2 teaspoon fresh lemon juice
Sea salt and black pepper, to taste
2 sandwich rolls or 4 lettuce leaves
Directions:
Chop shrimp into 1/2-inch pieces. In a bowl, add shrimp, mayonnaise, fresh dill, lemon juice, and salt and pepper to taste and mix well. (Optional: let shrimp salad sit in the refrigerator for 30 minutes to help marry the flavors.) Then, spread evenly between long sandwich rolls or lettuce leaves, and serve.
Five-Ingredient Tip: Buy New England-style rolls and toast each side with butter for even more flavor. Also, this recipe can be swapped to use lobster meat and create a delicious lobster roll.
