4 servings pasta, such as large elbows
1 cup half & half
12 ounces sharp cheddar cheese, shredded
Salt & pepper, to taste
1/2 cup chopped pimentos, or more if desired
2/3 cup panko-style breadcrumbs
Cook pasta according to package instructions. In a large pan, heat half & half until it’s steaming, but not boiling. Then, add the cheddar a little bit at a time, whisking it into the half & half. Once cheese sauce is fully combined, season it as desired with salt and pepper. Then add pimentos (if pimentos are in a liquid, make sure to drain them as well as possible).
Meanwhile, add breadcrumbs to a small bowl, and season with salt and pepper.
Preheat the oven to 350. Add the cooked pasta to the cheese sauce, and combine. Then, transfer the macaroni and cheese to an oven-safe dish, too with breadcrumbs, and bake 25 minutes.
