5 fresh peach slices, plus olive oil for grilling
2 tablespoons diced pancetta
1 slice sourdough bread
4 ounces burrata
Honey, to drizzle
In a grill pan, add a splash of olive oil. Grill peaches on medium heat until grill marks appear, 3-5 minutes per side. Remove the peaches, then add pancetta to the grill pan, and cook on medium-low heat until crispy, about 5 minutes.
Toast sourdough to desired crispness. Top with burrata, peaches, then pancetta, and finish the toast with honey and sea salt.
