Vegetable Stromboli

1 package store-bought pizza dough
2 cups shredded mozzarella
1/2 cup pizza sauce
1/2 cup chopped mushrooms
1/2 cup chopped eggplant
Salt and pepper
Olive oil, for brushing
Five-Ingredient Tip: Feel free to use what vegetables you prefer for this dish. Broccoli, olives, bell peppers, etc. are all great alternatives or additions.

Preheat the oven to 450. Spread out pizza dough onto a rectangular baking sheet. Place half of the mozzarella down the middle of the dough, horizontally. Top with pizza sauce and assorted vegetables, and season with salt and pepper. (If using mushrooms, make sure to rinse them first.) Add the remaining mozzarella.

Fold the dough one side over the other to create the stromboli. Brush olive oil over the top, and bake 20 minutes or until dough is golden brown.
