
Ingredients:
4 servings orzo (about 1 1/3 cups)
1 stick butter
1 garlic clove, minced
4 cups packed fresh spinach
Salt and pepper, to taste
1/2 cup freshly grated Parmesan
Directions:
Cook orzo according to package instructions. Meanwhile, in a large pan, add butter and garlic, and let garlic sauté on medium-low heat for about 5 minutes. Turn the heat to low, and add the spinach. Let it fully wilt, then turn the heat off.
As orzo is almost cooked, add 1/3 cup pasta water to the pan. Drain the remaining water, and add the orzo to the pan, tossing it with the butter and spinach. Season generously with salt and pepper, then add Parmesan and toss.
