Maple Glazed Turkey Breast

Ingredients:
1 turkey breast
1/2 cup chicken stock
2 tablespoons mayonnaise
Salt and pepper
1/3 cup maple syrup
4 tablespoons butter

Directions:
If preparing a frozen turkey, defrost it entirely in the refrigerator before cooking (this might take a couple of days). Once the turkey is defrosted, preheat the oven to 400 degrees Fahrenheit, and place the turkey in a roasting pan. Cut an opening in the skin of the turkey, and spread the mayonnaise as much underneath the skin as possible; whatever mayonnaise remains should be spread on top of the skin. Season the turkey generously with salt and pepper, then pour half a cup of chicken stock into the roasting pan. Place the turkey in the oven, and let it roast for 1 hour.

Meanwhile, warm the syrup and butter in a microwave-safe dish, and mix it to combine. Then, remove the turkey from the oven, and carefully pour half of the syrup mixture over the top of the turkey. Place the turkey back in the oven, and let it roast for another hour.

After 2 hours, remove the turkey once more, and pour the remaining maple glaze over the turkey breast (you might need to reheat the glaze to pour it). Put the turkey breast back in the oven for another 15-30 minutes. Remove it, and make sure the temperature is at least 165 degrees Fahrenheit. Let the turkey rest 15 minutes before carving it, then slice it into 1/2-inch thick pieces.
