Roasted Tomato & Feta Dip

3 cups cherry tomatoes
1 tablespoon olive oil
1/4 teaspoon sugar
Salt & pepper
1, 7-ounce block feta
1 tablespoon fresh parsley, chopped
Optional honey drizzle

Wash cherry tomatoes. Preheat the oven to 400. In a bowl, combine cherry tomatoes, olive oil, and sugar. Season generously with salt and pepper.

Add the feta to the center of an oven-safe dish. Transfer tomatoes into the dish around the feta. Bake for 30 minutes. Remove the tomatoes and feta from the oven, and top with a drizzle of honey, plus parsley, if desired. Mix the feta with the tomatoes, then serve with pita bread or crackers.
