1 cup chopped asparagus
1 cup chopped white mushrooms
2 tablespoons olive oil, but more as needed
Salt and pepper, plus other seasonings as desired
2 servings (4 ounces) whole grain linguini
2 tablespoons lemon juice
Add asparagus, mushrooms, and olive oil to a large pan. Season with salt and pepper, plus other seasonings as desired (crushed red pepper, garlic powder, etc.) Sauté vegetables on medium-low heat for 10-15 minutes, or until fork tender (if needed, add a bit more olive oil as veggies cook).
While vegetables are cooking, cook linguini according to package instructions. Before draining the linguini, reserve 1/4 cup pasta water. Add water to the vegetable pan, then toss the linguini with the vegetables. Add lemon juice, toss pasta once more, and serve.
