1 cup quinoa
2 cups shaved sweet potato
2/3 cup whole wheat bread crumbs
1-2 teaspoons curry powder
Olive oil, butter, or cooking spray for cooking
Cook quinoa according to package instructions.
In a large bowl, combine sweet potato, cooked quinoa, bread crumbs, curry powder, salt and pepper, and eggs. Once the mixture is well combined, shape it into patties, and refrigerate 30 minutes.
To cook the patties on the stove, add some olive oil (or butter, or cooking spray) to a pan, and cook on medium-low heat for about 5-7 minutes per side.
Five-Ingredient Tip: For an extra flavor boost, add other veggies, such as 1 cup finely chopped sweet onion or 2/3 cup finely chopped green onion, to the mixture (though certainly not required).
