Tabbouleh

Ingredients:
5 ounces bulgur wheat
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 cup finely diced tomato
1/3 cup chopped fresh parsley, or more if desired
2 tablespoons freshly chopped mint

Directions:
Prepare bulgur wheat according to package instructions.
Once bulgur wheat is fully prepared, add olive oil, lemon juice, diced tomato, and fresh parsley, and toss to combine.
