3 jalapeños, halved lengthwise
4 ounces ground chicken, plus oil for cooking
1/2 cup shredded sharp cheddar, divided
6 tablespoons light cream cheese
1/4 cup chopped onion
Preheat the oven to 375. Slice jalapeños lengthwise, and remove the seeds and membrane. Set aside.
Add a splash of oil to a pan; add chicken, as well as desired seasonings, and cook on medium heat for about 7-8 minutes or until chicken is fully cooked. Transfer the chicken to a bowl, and combine it with cheese, cream cheese, and onions. Stuff the mixture into each pepper. Transfer peppers to an oven-safe dish, and cover the dish with tin foil. Bake at 375 for 30 minutes.
