Penne Alla Vodka

1 1/2 cups penne (2 servings)
2 tablespoons butter
1/2 cup canned tomato sauce
2 tablespoons vodka
1/2 cup heavy cream

Cook pasta according to package instructions. In a medium pan, melt butter. Add tomato sauce and simmer on medium-low for 2-3 minutes. Season with salt and pepper. Add vodka, then simmer 5-7 minutes. Add heavy cream, then simmer for an additional 3-4 minutes. Toss pasta in sauce. Top with fresh parsley for a pop of color (optional), and serve.
