1 slice whole grain bread
1/4 cup tomato, finely chopped
1 tablespoon cilantro
1 tablespoon red onion
1/2 avocado, thinly sliced
Optional: Squeeze of lime juice
Toast bread to desired crispness. In a bowl, combine tomato, cilantro, and red onion, plus optional squeeze of lime juice, to create pico de gallo mixture. Season with salt and pepper. Top toast with avocado, plus pico de gallo.
If you have it: Chop 1 teaspoon of fresh jalapeño, and add it to the pico de gallo for a spicy kick.
