Chicken Alfredo Stuffed Shells

These decadent Alfredo stuffed shells are loaded with cheesy goodness! They’re an easy weeknight dinner idea, and the kids will love them, too. A great comfort food pasta recipe that everyone will love!

Ingredients:
12 jumbo shells
1 1/2 cups of chopped crispy chicken, such as Tyson
12 ounces of fresh mozzarella (4 ounces for the shells, 8 for topping the shells)
[Salt & pepper, plus any other desired seasonings]
6 ounces of ricotta cheese
1 cup of good-quality jarred Alfredo sauce (if you want to make your own, keep reading!)**

Directions:
Cook the jumbo shells and crispy chicken according to package instructions. Once the chicken is cooked, let it cool, then chop it up. Shred 4 ounces of the mozzarella, and slice the remaining 8 ounces (if it’s easier, you can shred it all!).

In a large bowl, combine the chopped chicken, shredded mozzarella, and ricotta cheese. Season the mixture with salt and pepper as well as any other desired seasonings (you can add dried basil, parsley, garlic powder, etc. – whatever you want!).

Preheat the oven to 350. Once the shells are cooked, rinse them briefly under cold water to cool them off. Stuff each shell with a large spoonful of the mixture, then place the shells in an oven-safe dish. Top the shells with Alfredo sauce, then the sliced mozzarella and any additional seasonings you might want, and bake for 20 minutes.

**To make your own Alfredo sauce, just heat 2 tablespoons of butter and 1/2 cup of heavy cream in a pan, then whisk in 1/2 cup of freshly grated Parmesan cheese, plus some salt and pepper. Let it heat on low to thicken up. So much better than store bought!
