Ingredients:
1 large Vidalia onion, chopped [plus some olive oil]
[salt & pepper, to taste]
16 ounces of store-bought pizza dough
2-3 tablespoons of chili crisp (depending on how much spice you want)
1 1/2 cups of freshly shredded Gruyere
1 small apple, chopped
Directions:
In a large pan, add the chopped onion and a splash of olive oil, plus some salt and pepper. Let the onions heat on low, stirring frequently, until they’re fully brown, about 20-30 minutes. If the onions look like they’re starting to burn, add some water to the pan, which will help deglaze it and prevent the onions from burning. You can do this as frequently as possible until the onions are a rich brown color. Let the pizza dough sit at room temperature while the onions caramelize.
Meanwhile, preheat the oven to 425. Roll out the pizza dough. Once the onions are done cooking, build the pizza: Add the chili crisp, then cheese, then apples, then caramelized onions. Season with additional salt and pepper, if desired. Bake for 20 minutes; check the pizza after about 15 minutes to make sure it’s not burning, as oven times can vary.
