Smoky Chipotle Chicken Dip

8 ounces cream cheese, softened
1 1/2 cups shredded cheddar or Monterey Jack
2 chipotle peppers in adobo sauce, chopped (usually found in the International grocery aisle)
10 ounces shredded chicken
1/4 cup chopped onion

Preheat oven to 350. In a large bowl, combine all ingredients. Bake for 20 minutes.
