Cajun Shrimp Crostini

2 tablespoons olive oil
1/2-1 tablespoon Cajun seasoning
10-12 medium shrimp, thawed
1/2 French bread baguette, sliced (about 10-12 slices)  
1 cup guacamole (or 1 avocado, sliced)
squeeze of lime juice (optional)

Combine olive oil and Cajun seasoning. Add shrimp to a large, sealable bag, then coat with seasoning mixture and marinate 30 minutes.

Toast baguette slices until crispy. In a medium pan on medium heat, add a splash of oil and cook shrimp, 2-3 minutes on each side. Peel shrimp and add a bit more seasoning to cooked shrimp, if desired. Top baguette with guacamole and shrimp, plus a squeeze of lime juice (optional).
