Greek Couscous Salad

1/3 cup couscous, plus olive oil
2 tablespoons feta
2-3 mint leaves, sliced
1/3 cup kalamata olives
1-2 tablespoons lemon vinaigrette

Cook couscous according to package instructions. Let couscous cool 10 minutes, then add feta, mint, olives, and vinaigrette. Toss and serve.
