2 zucchini, peeled
1/2 cup Italian-style breadcrumbs
1 clove garlic, crushed
2-3 tablespoons mayonnaise
1 tablespoons feta
Olive oil, for cooking
Peel zucchini, and shred it with a cheese grater. Squeeze zucchini to remove excess moisture. In a large bowl, add zucchini, breadcrumbs, garlic, mayonnaise, and feta. Season with salt and pepper, and mix to combine. Form into patties and refrigerate 15 minutes.
In a large pan, add a splash of olive oil and cook zucchini fritters on medium-low, 4-6 minutes per side or until golden brown.
