2 servings bowtie pasta
1 cup marinated artichoke hearts
1/3 cup chopped sun dried tomatoes
3/4 cup light cream or half and half
1/3 cup freshly grated Parmesan
Salt and pepper to taste
Cook pasta according to package instructions. Meanwhile, in a medium-sized pan, add artichoke hearts and sun dried tomatoes. Let them heat on low for about 5 minutes. Add cream, and as it heats, whisk in Parmesan. Season sauce with salt and pepper, and let it thicken on low while pasta cooks. Drain pasta, then toss it with sauce and vegetables, and serve.
