Arugula Chicken

2, 8-ounce chicken breasts
Salt and pepper
4 ounces fresh mozzarella
2 cups arugula
1 cup chopped cherry. tomatoes
2-3 tablespoons store-bought lemon vinaigrette

Preheat the oven to 350. Season the chicken breasts with salt and pepper, add them to an oven-safe dish, and cover them with aluminum foil. Bake for 35-45 minutes or until chicken reaches an internal temperature of 165. Then, remove chicken from the oven, place mozzarella over the top of the chicken, and broil the chicken breasts on high for 2-3 minutes to melt the cheese.

When the chicken is just about done cooking, add the arugula, tomatoes, and lemon vinaigrette to a bowl, and toss it well. Remove the cheese-covered chicken from the oven, plate it, and top it with the arugula salad.
